"Here, all is order and beauty, luxury, peace, and pleasure." Aurélie Vermesse wanted the Clarance to fulfill the promises contained in this verse by Charles Baudelaire. A few stanzas from the poet even greet visitors in each of the 19 rooms of this former private mansion.
From the residence of the Count and Countess of Hespel, built in 1736, the ceilings, floors, and woodwork remain.
The rest, like the contemporary art collection open to the public, is the work of the new owner, a native of the region who has beautifully enhanced the potential of this exceptional place.
The garden not only provides a relaxing retreat for visitors but also houses a 100% organic vegetable garden. It is here that Nicolas Pourcheresse sources fresh vegetables and aromatic herbs. Voted the youngest Michelin-starred chef of 2005, this 43-year-old Jurassian has made the kitchens of the Clarance his playground. Come and delight your palate with the flavors he has brought back from his travels across the globe.

The restaurant offers various menus, from a quick lunch (€40 / person) to a tasting dinner (€120 / person).
We appreciated their original offer, the Sunday meal: every Sunday at noon, the chef takes us back to the atmosphere of meals at grandparents', the one that smells of festive cooking and family reunions around those famous traditional dishes rooted in our culinary memories.
